    This is a post about how I use the Big Chief smoker.



    I am no expert, nor do I claim to be. What this post is intended to show is that
    basic fish smoking is easy. It's inexpensive and results in a tasty treat that can be great

    Load your racks of fish into the smoker and fill the pan with wood chips.



    Plug the smoker in and watch for it to start smoking. It should take about twenty minutes. When it starts to really billow smoke, unplug it.

    Here's a method I use for curing leftover shrimp after a steelhead trip. I don't know how I came up with the name 'people prawns', but it was a way I would describe them to avoid confusion with sandshrimp and cured Coon Shrimp used in other fisheries. These are simply shrimp that are sold as food at a regular grocery store and many people refer to them as prawns.
